On behalf of the Bulleit Distilling Company based in the US state of Kentucky, unnamed large distilleries produce the Kentucky Straight Bourbon Whiskey according to a recipe of the Bulleit family. As of 2017, production will also take place in a newly built distillery. In addition to a grain mixture of 68 per cent corn, 28 per cent rye and four per cent malted barley, a special yeast strain and the regions limestone-filtered water form the starting point.
Whiskey production in the United States is dominated by about a dozen large distilleries, so that almost all whiskey sold comes from a single distillery, and blended whiskey is almost non-existent as a mixture of the whiskey of several distilleries.
The terms single barrel for whiskey from a single cask and small batch for whiskey from a relatively small number of casks have become established as distinguishing features.
