This bottling from two casks of an 8-year-old Caol Ila was produced by the independent bottler Signatory Vintage in the series The Un-Chillfiltered Collection. The whisky was distilled in 2011, matured in ex-bourbon hogsheads and bottled in 2020 in individually numbered bottles.
Caol Ila means Sound of Islay and derives from the location of the distillery directly on the strait. Founded in 1846 and renovated from the ground up in 1974, it produces a mid-range Islay whisky.
